ICC Sydney is a $1.5 billion development that has transformed the Darling Harbour precinct. The project delivered 35,000sqm of internal exhibition space, the largest commercial kitchen in the southern hemisphere, Australia’s largest ballroom, an open air event deck, and an 8000 seat entertainment theatre.

We are currently looking to recruit an experienced Retail Food & Beverage Services Manager to deliver world-class event retail food & beverage experiences at ICC Sydney.

This role is responsible for directing, analysing, organising, formulating, implementing, budgeting, supplier management, and administrating the operational retail food and beverage activities for all event cafes, kiosks, activations and retail bars here at ICC Sydney. 

 

Responsibilities:

  • Leadership - Manage, inspire and coach the retail outlet teams to their fullest potential, ensuring individual and team performance meets the departments’ objectives and clients’ expectations.
  • Financial Performance -  Monthly budgeted financial targets are achieved through inventory and labour cost control management
  • Development of the Retail Services annual business and pricing plans
  • Planning, execution and delivery of food, beverage and service for all event retail outlets & kiosks 
  • Maximise sales through effective team distribution, high quality merchandising, and innovative service.
  • Compliance - Responsible for enforcing ICC Sydney’s food safety systems and the daily completion of documentation.
  • Compliance  - Responsible for the strict compliance with the NSW Liquor Act and Liquor regulations and ICC Sydney liquor licence conditions
  • Compliance - Responsible for compliance with WH&S processes and procedures including emergency procedures.
  • Responsible for event revenue forecasts, daily retail sales reporting, event P&L’s, accounts receivable and cash control management.
  • In collaboration with the Executive Chef the development and implementation of new product ranges, promotions and services for the retail services. 

 

The ideal candidate must have a strong executional background leading cross functional teams and people management in in a diverse environment with a focus on providing exceptional customer food and service experiences within a large, multi-outlet venue in Australia.
