Full Time Food & Beverage Manager This is your opportunity to join our Management Team in the Food and Beverage section at the Bellachar Restaurant within Mercure Gerringong Resort. Our lovely Bellachar restaurant is a Fine Dining restaurant and we thrive to provide customers with exceptional service. Mercure Gerringong is part of the Accor Group of Hotels. As a key management team member of our team you will represent our friendly and professional service philosophy.
The successful candidate will have:
  • management experience in high-end restaurants
  • experience of working and managing Weddings and Conferences
  • a passion for delivering exceptional customer service
  • be a natural leader, trainer & motivator
  • good knowledge of reservations, revenue management & seating strategy
  • passionate about providing quality food & drinks
  • Creativity, innovation and initiative
  • Maturity and be a self-starter with independent time management and work flow skills
  • Strong verbal & written communication skills
  • Previous Management and hospitality experience in a similar role
  • Barista skills
  • Friendly, customer focused attitude 
  • Responsible service of alcohol (RSA) certificate
  • Ability and flexabilty to work various rostered shifts, including early mornings,  late evenings and weekends.
 
Key duties of this role include, but are not limited to the following: 
  • Overseeing restaurant operations of BellaChar Restaurant & Wine Bar in consultation with the director and head chef
  • Working with Events staff in organising Weddings and Conferences
  • Taking reservations, planning and organising special functions at the restaurant
  • Planning and implementing marketing promotional strategies in conjunction with the management and other branches to improve sales and business performance;
  • Ensuring dining facilities including the hall, service areas and the kitchen comply with health and food safety regulations, and ensuring all dining equipment and utensils including serving plates, restaurant tables and chairs are clean, functional and of suitable appearance;
  • Maintaining records of stock and financial transactions, cash handling and keeping account records;
  • Being responsive to customer feedbacks and ensuring their satisfaction with meal and service;
  • Planning and implementing marketing promotional strategies in conjunction with the management and other branches to improve sales and business performance;
  • Selecting, training and supervising restaurant staff
  • Maximise sales opportunities by upselling items. 
  • Training and development of food and beverage team members
