About Fulham Correctional Centre

Fulham Correctional Centre is located near Sale in Victoria, approximately 200km east of Melbourne.

Fulham has been continually managed by GEO on behalf of Corrections Victoria since opening in 1997. It is Victoria's largest regional correctional centre.

Fulham’s primary role is to safely and securely house up to 947 adult male prisoners and progress their sentence plans by delivering a comprehensive range of education, vocational training, reintegration and offending behaviour programs. Together, these lower a prisoner’s risk of reoffending and increase the likelihood of successful community reintegration.

A key area of Fulham's operations is the Nalu Challenge Community. Located next to the main prison site, Nalu's prisoners benefit from an intensive program of community reparation, leadership/team work challenges and preparation for reintegration into the community.

 

About the Opportunity

The Food Services Department requires enthusiastic and reliable people to provide and develop a range of high quality food services in a hygienic, cost effective and nutritious manner to the staff and prisoners at the centre.

Reporting to the Catering Supervisor, the primary objective of a Catering Officer is to supervise prisoner employees, over a 7-day roster, in the provision and development of a range of high quality food services in a hygienic, cost-effective and nutritious manner to the staff and prisoners of Fulham Correctional Centre.

Skills & Experience

In order to succeed in the role, you will possess the following:

  • Relevant experience in bulk cooking procedures, being a minimum of Certificate III in Cookery/Bakery;
  • A working knowledge of large commercial kitchens, including proven ability to operate all relevant equipment;
  • Demonstrated knowledge of ISO 22000 (HACCP) and food safety legislation;
  • The ability to multitask without supervision;
  • The ability to supervise unskilled workers in a kitchen environment;
  • The ability to work in a correctional environment, which will involve direct contact with prisoners;
  • The ability to work as a team with other Catering Officers and prisoner employees;
  • The ability to communicate effectively with other employees and use good decision making skills; and
  • A forklift licence (advantageous, but not mandatory)
