About the role
Situated on the fringes of bathers beach, this Iconic venue delivers the highest standards of food and service, offering an A-la-Carte menu along with weddings and corporate events. As the sous chef you will assist in leading a large and committed team in the kitchen and oversee the daily operations of the kitchen where you will report to the Head Chef. In this role you will ensure the highest standard of delivery across a range of events and have the opportunity to be a creative force in menu design for ongoing seasonal menus. In your role you will assist the Head Chef to

•    ensure the consistency, quality and integrity of our product
•    exceed guest expectations
•    oversee the operations in our large, dynamic kitchen
•    prepare, direct and deliver a range of al la carte, canape and function dishes

About You
You will be reliable, motivated, and passionate about food. You will value attention to detail and presentation and have that creative flair. In this kitchen you will need a good personality and a high level of team engagement.
To secure this position you will have:
•    Culinary qualifications 
•    Previous experience in High volume a la carte & banquets
•    Demonstrated strong leadership to manage a kitchen team
•    Ability to  train  and mentor
•    Wage cost control
•    Demonstrated knowledge of food costing's, ordering and  stock takes
•    OH&S and Food Safety within a busy and diverse, professional kitchen
•    Experience in menu planning and creation
•    Exceptional eye for detail

This role will require you to work weekends on a flexible basis.
