Delaware North Companies Australia is excited to begin recruiting for our brand new outlets and restaurants as part of Sydney Central Rail Stations redevelopment. So if you have a passion for the hospitality industry, this opportunity could be perfect for you. 

Delaware North is a market leader in the catering and hospitality industry with a portfolio spanning: sporting stadiums, airports, education, leisure and entertainment venues across Australia and New Zealand. 

We will be opening 6 new outlets to join our current Switchman café at the venue.  These offerings include; Eternity Restaurant & Bar, our Central Food Market (including the individual offerings of Convenience, Bakery, Grill and Fresh), and our 2000 Acres Café.

About the role

Based at Sydney Central you will be responsible to manage, monitor and lead the kitchen operations in the outlets of responsibility in line with Delaware North policy and legislative requirements to achieve financial plan, profit margins and business growth, while building Delaware North’s brand and client reputation.  This role will require someone who remains as passionate about working in the kitchen with your team/brigade as you are about designing new and exciting menu concepts to best deliver on the sites overall potential.

Experience & Capabilities

This role is very hands-on and would suit a highly motivated, professional and experienced Head Chef. The station operates over a 7 day period and flexibility between morning, evening and weekend shifts, as required is essential.

To be successful in the role you should have:

  • Overseeing multiple kitchen and food preparation activities
  • Influencing the menu development, and food production for our multiple outlets to offer a premium food and beverage experience
  • Managing food production for all food and beverage outlets on site, and play a key role in introducing in house products. 
  • Demonstrated experience managing all aspects within a kitchen environment, according to plan
  • Proven ability to manage, train and roster a kitchen brigade
  • A track record of impressing owners/clients stemming from superior stakeholder and relationship abilities
  • Sound knowledge of relevant federal and state legislation that impact upon the food, beverage and catering industry and associated workplace considerations
  • Well developed financial and business comprehension

Key responsibilities include:

  • Effective management of the kitchen budget; inclusive of all COG’s, labour and wastage, without compromising on quality
  • Menu design across all outlets, with a view to current trends and an ambition to elevate the profile of each venue
  • Recruitment and management of a kitchen workforce, according to budget, with the intent to inspire and develop through effective leadership and coaching
  • Production of accurate reports for the purposes of compliance and the identification of levers to improve operational standards and processes
  • Engage socially responsible kitchen practices to comply with internal culinary wellbeing and ‘green’ initiatives
  • Ensure compliance with HACCP and Food Safety at all stages of the food cycle: delivery, storage, preparation, cookery, service and rotation.

Qualifications:

  • Certificate in Commercial Cookery or Equivalent trade experience
  • Previous experience managing kitchen brigades in a high volume low cost environment
