Chef de Partiés – The Mill Hotel (Milperra)

JDA Hotels have exciting opportunities available for Chef de Partiés at The Mill Hotel.  This is a fantastic advancement opportunity for Chefs who wish to progress their careers.

THE COMPANY
JDA Hotels prides itself in offering ‘the premium pub experience’ and is an award-winning Hotel group looking for ambitious Chef de Partiés to fill a number of vacancies available now. The Mill Hotel offers quality pub food, beverages and entertainment activities.   JDA Hotels is a multi-venue group who prefer to promote from within, so career progression is possible for the right candidate.


THE ROLES
The roles currently vacant involve preparing and cooking top quality pub food under the Head Chefs direction and standards.  The Mill’s kitchen runs a large brigade and this position will require solid working knowledge of Modern Australian cuisine as well as previous experience gained in successful, high turnover restaurants or bistros.  The positions currently available are permanent, working to a roster which will include nights and weekends.

Your responsibilities will include:

  • assisting with the execution of top quality dishes
  • keeping your section organised
  • maintaining stock and ordering
  • ensuring the Bistro’s high standards are maintained
  • mentoring junior members of the brigade.
     

THE CANDIDATE
The successful candidates will have the following:

  • Must be trade qualified and hold certification in Commercial Cookery
  • Will have minimum two (2) year post qualified experience.
  • be able to work in a fast-paced environment under pressure
  • Possess attention to detail, particularly with regard to plating
  • good communication skills and be professionally presented at all times.
  • flexible and available to work nights, weekends, public holidays.


A key requirement in this role, is a genuine passion for producing great food coupled with good organisational skills, reliability, a great attitude and the ability to work calmly and effectively under pressure in a fast-paced and busy environment.

While previous high calibre hotel bistro or restaurant experience is preferred, it is not essential and may suit a Commis or Demi Chef looking to step up.
