About the Role

As the Sous Chef you will be responsible for supervising food preparation, monitoring food safety requirements and supporting the Senior Chef de Cuisine; Marco Bijl in the day to day running of the operation. The ability to effectively manage and mentor this large kitchen brigade in order to run services for over 1000 covers is crucial.

 

Requirements

  • Extensive experience as a Sous Chef or Junior Sous Chef
  • Experience in a large buffet operation is essential
  • Proven ability to lead large kitchen brigades
  • Culinary skills in international cuisine 
  • Creative, flexible and able to adapt to business needs and customer requirements
  • Ability to maintain exceptionally high and consistent food quality standards at all times with high levels of attention to detail
  • Demonstrated ability to mentor and effectively manage performance 
  • Solid business acumen to manage and monitor financial budgets, food and labour costs and other associated expenses
  • Familiar with regulated corporate procedures including Occupational Health and Safety procedures and knowledge of HACCP
