About the Hotel

The Hotel Windsor is an iconic Australian hotel embodying the architecture and elegance of a European style 'Grand Hotel', situated on Spring Street and located at the 'Paris' end of Melbourne. Our beautiful hotel is looking for an Executive Pastry Chef to join our team on a 12 months fixed term contract. The Hotel is renowned in Australia as having the finest Afternoon Teas in the country. Afternoon Tea at The Hotel Windsor is a quintessential Melbourne experience, steeped in tradition. Our hotel has proudly served over two million guests since 1883.

About the Role

This role will suit one of the world's finest Executive Pastry Chefs or Head Chefs ready to take the next step in their career. The ideal candidate will have a passion for the industry and will have the right attitude to motivate and lead a team of about 8 Chefs. We are looking for a Chef who’s experienced enough to maintain the highest standards our Hotel is known for.

Duties

Responsibilities include:

  • Develop and define quality standards of pastry items preparation and presentation;
  • Identify and develop new pastry products and equipment to enhance the product quality in Afternoon Tea, Banqueting and outside catering;
  • Develop the pastry kitchen brigades in line with world’s best practice;
  • Define the organisation of work within the pastry kitchen department including assignments, time schedules and vacations of staff;
  • Ensure training and development plans are in place for all team members;
  • Ensure the quality of food preparation and presentation, as per organisational     standards;
  • Ensure availability of stock and raw ingredients by proper planning and co-ordination with Purchase & Stores;
  • Establish recipes and methods of preparation and informs the F&B team of significant changes in prices affecting the preparation of pastry items.

 

Skills & Experience

  • A minimum of 2 years in a similar role;
  • Great knowledge of patisserie, chocolate and pastry;
  • Experience with staff supervision and management;
  • Superior team building skills;
  • A passion to deliver excellent results;
  • Excellent communication, interpersonal and time management skills.
