About the opportunity:
The Commercial Cookery Department has been through expansion and a cultural change recently - bringing new opportunities and exciting rewards for their staff.
APSI is looking for a qualified chef to deliver commercial cookery to international and domestic Australian chef apprentices. The ideal candidate must be able to demonstrate technical knowledge and skills in culinary arts, experience in running a commercial kitchen and deliver training based on RTO Standards. The ideal candidate must be highly motivated, time managed and able to work under pressure. Previous experience with other RTOs is highly desirable.
This chef trainer role is busy, fast paced and requires an experienced chef who has excellent organisational skills and commercial cookery teaching and compliance experience.
You will also be passionate about teaching young chefs to excel in their professions and with big industry network.
Flexibility and agility is required of this person due to develop new systems and that comply with legislative changes in the current market.
About the role:
- Coordinate and manage commercial kitchen operation in line with the SIT training package for the Certificate III and IV commercial cookery qualifications.
- Plan and prepare acquisition of cooking provisions, stock control and menu planning
- Deliver face to face culinary training in a group learning environment
- Coordinate and prepare learning and assessment materials with other trainers
- Prepare learning and assessment strategies and session plans
-Develop training materials and assessment tools and mapping of individual units
- Develop assessment guidelines and benchmarking
- Conduct regular industry consultation, validation and moderation of units with industry professionals.
- Build strong relationships with host workplace venues allied with the organisation
- Manage student correspondence and assessment records and upload documents to the central database
-Coordinate, monitor and assist in workplace visits for student chefs in the workplace
Skills and attributes required:
Proven experience in a training in commercial cookery role
Must hold Cert IV in TAE40110 or TAE40116 with LLN unit.
Relevant Tertiary/Industry /Trade qualifications in cookery / culinary arts in hospitality industry
An ability to build trust and rapport with internal and external customers
At least five years work experience in a commercial kitchen
RTO training experience as a trainer and/or assessor in a similar capacity
An understanding of RTO compliance requirements and ESOS Act
Federal Police Clearance and Work with Children Check
Strong communication skills
Experience in delivery of group training
Microsoft office operational knowledge
Experience with International students and work in a diverse cultural environment
