The Venue
Established in 1921, today the Club stays loyal to it's grass roots of Skiff Sailing whilst at the same time offering two bars, a harbourside brasserie, a function and events space catering for up to 140 guests plus a conference room and an over the water deck perfect for dining and informal get togethers.
The Position
Reporting to our Group Executive Chef, you would oversee the entire Manly kitchen operation servicing both our high volume casual dining offer and our unique 'over the water' function, event and conference space.
Key Responsibilities include:
- supervision of a kitchen team of up to 14
- setting the standard for, and ensuring the delivery of, a consistent and high quality menu
- bi annual menu reviews
- meeting or exceeding cost of goods and labour targets
- maintaining a great relationship with the FOH team
- ensuring the kitchen is always presented to the highest possible standard
- training, development, rostering and recruitment of all kitchen staff
- reviewing, monitoring and managing staff performance
- full knowledge of all kitchen WHS, safe food handling practices and HACCP
The ideal candidate will:
- be experienced in a similar high volume casual dining venue
- be free to use their creativity and be looking to stay at the forefront of trends and innovation
- have a keen eye for detail
- have the flexibilty necessary to work days, nights and weekends
- have the ability to remain calm in a high pressure environment
- above all else have a passion for great food
