We are a 5-star heritage listed hotel, conveniently located on Pitt Street in midtown Sydney. A stunning revival of inter-war period architecture, the former headquarters of the Sydney Metropolitan Water Board. A world-class hotel featuring 172 rooms, a dedicated Mezzanine Level with multi-functional meeting and conference space, versatile restaurant, lobby bar and rooftop pool bar venues.

We are currently looking for an enthusiastic and professional Chef De Partie to join our Banquets team on a Full Time basis.

The Chef de Partie will be responsible for undertaking a variety of tasks:

  • Prepare, cook, serve and store food items for events and functions
  • Maintain costs within departmental budget with guidance of Supervisor and management
  • Ensure strict cost control, standard recipes, wastage control etc.
  • Be familiar with all functions and happenings within the hotel and brief the staff accordingly
  • Coach support and mentor junior chefs within the kitchen brigade
  • Attend and participate in daily briefings and other meetings as scheduled
  • Promote teamwork and quality service through daily communication and coordination with other departments

To be successful you will need:

  • Demonstrated passion for food and the hospitality industry
  • Have a keen eye with high attention to detail
  • Proven experience in a similar position working in a 4 or 5 star hotel (desirable)
  • Previous experience with a la carte/banquet service
  • Excellent communication skills
  • Ability to keep calm under pressure
  • Flexibility in working variable shifts over 7 days, including weekends and Public Holidays
