TAHBILK WINERY situated in the Nagambie Lakes wine region, approximately 8 km south of Nagambie in Victoria’s Goulburn Valley and 1.5 hours north of Melbourne, requires a HEAD CHEF for our restaurant situated on our historic property.

Our normal trading hours are Thursday to Monday 10.00AM – 4.00PM with the restaurant closed on Tuesday and Wednesday. 

Overlooking the Tahbilk Wetlands, the restaurant is a relaxing environment to work in and has a friendly and helpful front of house team. Your ‘Tree Change’ awaits you!

We are seeking a qualified experienced Head Chef with at least 10 years’ experience in the hospitality industry to lead our back of house team.   

The Tahbilk Chef’s position is a “hands on” role with the following key responsibilities but not limited to:

  • Develop, design and deliver a clean, fresh and diverse menu that changes seasonally as well as taking into account market and restaurant requirements.
  • Preparation of special menus for special events and/or seasonal activities.
  • Cost menus to establish pricing that will provide value for customers while contributing to maximising revenues
  • Provide leadership, supervision, training and direction to the restaurant back of house team.
  • Maintain and foster open communication with front of house staff, management, internal and external customers.
  • Provide efficient and effective supervision of food services, cooking, ordering, budgeting, maintenance of equipment and staff supervision.
  • Manage food, staff training and labour costs.
  • Ensure through own actions and supervision, that the delivery of restaurant menu items is consistent in both quality and presentation to required standards.
  • Be available to work on occasion for trade and other evening functions outside of the standard hours of operation.
  • Organise monthly kitchen staff rosters.

  • Maintaining and fostering open communication with front of house staff, management, internal and external customers.
  • To demonstrate a high commitment to quality performance in all work performed to support Tahbilk’s goal of innovation and continuous improvement.
  • Be innovative and proactive in streamlining day to day operations and maintain the highest standard of ethics at all times.
  • Demonstrate an ability to be adaptive and accepting of new ideas and a willingness to approach new challenges and adjust plans to meet new priorities.
  • Attention to detail; maintain a sustained level of concentration to ensure accuracy and to identify and address any errors.

Prospective candidates are required to undergo Psychometric testing. 

Remuneration and conditions will be in accordance with the Tahbilk Enterprise Agreement 2006.
