Who we are

The Apollo is a modern Greek restaurant that opened in Potts Point, Sydney in 2012. Cho Cho San, a re-imagining of a Tokyo Izakaya opened (down the road) in 2014. In 2016 we brought The Apollo to Ginza, Tokyo. 

Both the Apollo and Cho Cho San are proudly ranked in the Australian Financial Review's top 100 restaurants for 2019, have been awarded a Chef's Hat each year since opening and are consistently featured in the Australian Gourmet Traveller's top 100 restaurants.

You will

  • Be involved in every element of running the business and support the opening of the venue in Spring 2018.
  • Recruit your own team of restaurant professionals and help to develop and grow your team.
  • Plan and implement training programs for your team, alongside the company director and the operations management team.
  • Work with the existing team at our Sydney Venues to understand our brand and style and help us bring that to the Brisbane market. 

The candidate must be able to demonstrate the following:

  • Be a great host, our restaurants place the guest experience at the heart of their operations. This means not only laying the stage for a dining experience that is energetic, upbeat and engaging but also creating one that connects with our regular guests, so we become their home away from home.
  • Demonstrated leadership skills that focus on team and creating a superior guest experience. 
  • You will also be a leader that is calm under pressure and who can execute a service that is professional, engaging and knowledgeable within the energetic atmosphere of a busy Wharf side celebration restaurant.
  • Have a flexible and accommodating attitude – nothing is a problem.
  • Experience in managing a venue with a chef's hat or a similar level
  • Have proven experience of meeting KPI's and managing the teams to a budget
  • Have an in-depth knowledge of the Brisbane market, guests, Brisbane press and Industry peers
  • Have great organisational skills, with a high level of attention to detail.
  • Ability to work autonomously and build productive relationships with members of the wider group teams based in Sydney, in particular demonstrating excellent communication and relationship management skills.
  • Have a good working knowledge of technology and office software, as well as POS / reservation systems.
