Research Description
This project is sponsored by a UK company and will investigate novel natural or ‘clean label’ food preservatives using both in vitro assays and real food systems. These are being developed to meet consumer demands and to address the food industry’s need to meet this challenge in an affordable way to improve the aroma, taste, appearance and safety / shelf-life of food products. These preservatives will be used to challenge a number of key food poisoning bacteria, including Listeria monocytogenes, Salmonella enterica and Escherichia coli and also the food spoilage organism Saccharomyces. Following in vitro tests, the efficacy of selected materials will be tested in real food systems, to determine if their antimicrobial activity is affected by the physical conditions that exist in the food.
The project will provide further training for the students in microbiological techniques (full training to handle up to BS level 2 pathogens), training in experimental design and gain familiarity with the published literature relating to the use of natural flavours and food ingredients with inherent antimicrobial functionalities. In addition students will gain an awareness of the testing and evaluation required before new antimicrobials are approved for use and therefore they will also gain knowledge which will equip them for possible further employment in this sector.

Terms and Conditions
Only open to HEU students. Candidates need to be able to commence their studies by Oct 16th. All fees and students stipend (£15,280 p.a.) will be covered by the company sponsoring this project.
Applicant Qualification Requirements
Minimum 2.i BSc degree in Biological Science or Food Science, but degree must have a significant component of microbiology. Must have some previous training or experience handling bacterial pathogens up to Biosecurity level 2.
