Hi
We have a vacancy for a full time experienced baker. The candidate will have a knowledge of wild yeasts, sourdough techniques and pastry knowledge.
Including; daily bake off and mixing of non-retarded doughs, enriched doughs, rolls, platted loaves, hydration, humidity, water & and flour temperature calculations, mixing, folding, and hand moulding of sourdough’s, seed activation, and grain sprouting, weigh ups for following day, daily feeding of starters and mothers, pastry lamination, cutting and folding, quiche, pie and tart doughs, brownies, scones, cakes, toppings, crème patisserie, savoury prep, mayonnaises, dressings, soups, ready meals.
Experience in European techniques for sourdough's and upscale deserts and cakes would be ideal. Candidates must be passionate about artisan baking and pastry.
3 Years + of hands on baking experience and or equivalent qualifications (ANZSCO skill level 3 ) required.
Payment above market rate.
The hours are 4am-12pm 5 days a week.
