About the role
Anglicare Catering is a multi-million dollar catering facility located in Baulkham Hills, specialising in providing meals to Anglicare aged care homes and other external aged care providers. Our menus are custom designed by our Head Chef and reviewed by an internal team and a Consultant Dietitian.

Reporting to the Catering Services Manager, you will play a key role in ensuring products and services are of the highest quality by providing expert advice on food safety, quality, product development and nutritional information.

Key responsibilities:

  • Maintain and Administer the Central Production Kitchen and Residential Care Home Food Safety Plans to ensure procedures for food handling, processing, delivery and serving are developed and maintained in compliance with the Australia and New Zealand Food Standards Code using HACCP principles.
  • Conduct internal audits of Anglicare Residential Care Homes and provide support during NSW Food Authority Audits
  • Maintain supplier HACCP Certification, conducting monthly supplier reviews and follow up of supplier issues relating to product quality and safety.
  • Approve changes to supply of products and specifications to meet operational needs in conjunction with agreed pricing by the Head Chef and Purchasing Officer;
  • Coordinate recipe development and improvements, cooking processes, portioning, cleaning and sanitising of equipment/utensils;
  • Working with the consultant dietitian to ensure nutritional standards are maintained in accordance to all legislative requirements;
  • Contribute to the menu planning process by reviewing work methods, providing input into new recipe trials, trouble shooting and maintaining the ingredient and nutrition data including management of specifications and updating of the ingredients database;
  • Contribute to meeting agreed client service standards by reporting and acting on client feedback and following up with food suppliers to ensure a constant supply of quality food products;
  • Ensure safe work practices are carried out within safety, health, hygiene and cleanliness standards and the relevant food and health authorities by maintaining standards and operating procedures and WHS policies.

Skills, knowledge and experience needed:

  • Bachelor Degree in Food Science.
  • Comprehensive understanding of good manufacturing practices, preferably in Cook Chill.
  • Qualification or training in HACCP implementation and auditing.
  • Familiarity with the relevant Food Standards Code relating to food preparation and service for the vulnerable population (desirable)
