Japanese Chef

‘Twohans’ is currently in business for Japanese restaurant located in mid north coast area in NSW, and we are seeking an enthusiastic and passionate chef who is experienced in Japanese cuisine, including sushi and sashimi preparation.

It is essential for applicants to hold relevant qualifications in commercial cookery, and to have at least 1 years’ experience in Japanese cooking including sushi and sashimi as well as other hot dishes. As the position also involves preparation of sushi and sashimi menu items, applicants must be experienced in checking the quality of raw seafood items, storing raw food safely as well as preparing and seasoning raw seafood.

 

Duties:

  • Must be able to lead and motivate a team as well as work independently.
  • Display a confident and creative cooking style with a strong emphasis on consistency and presentation.
  • Ensure food quality, presentation and safety standards are maintained.
  • Abide by health and hygiene standards in all food storage and preparation areas.
  • Adapt to guest`s dietary needs and requests.
  • Responsibility for a designated section including cold or hot larder.
  • Monitor and mentor Apprentices to ensure all items are prepared in line with menu.
  • Abide by health and hygiene standards in all food storage and preparation areas.

     

Skills and Experience:

  • Minimum 1 years experiences in Japanese cuisine.
  • Certificate IV or Diploma in Commercial Cookery essential.
  • Strong knowledge of Asian cooking techniques – including sushi and sashimi and hot foods.
  • Understanding of Japanese source and Asian cooking is essential.
  • Experience in a high - volume kitchen in a hotel or resort is preferable not essential
  • An understanding of international cuisine, modern cooking and presentation
