Who we are

The Apollo is a modern Greek restaurant that opened in Potts Point, Sydney in 2012. Cho Cho San, a re-imagining of a Tokyo Izakaya opened (down the road) in 2014. In 2016 we brought The Apollo to Ginza, Tokyo. 

Both the Apollo and Cho Cho San are proudly ranked in the Australian Financial Review's top 100 restaurants for 2019, have been awarded a Chef's Hat each year since opening and are consistently featured in the Australian Gourmet Traveller's top 100 restaurants.

You will

  • Be involved in the establishment of the venue, working with the group directors to create one of Brisbane's great culinary destinations.
  • Build and lead a team of professionals to work along side you in the kitchen which will include charcoal fire, stone baker ovens and the latest kitchen equipment.
  • Work with some of best produce in the country to create exceptional dishes.
  • Help to develop a network of local suppliers to source exceptional produce.
  • Have lots of creative freedom and support, working alongside others to help develop new dishes and menu ideas.
  • Working with charcoal fire and the latest kitchen equipment.

The successful candidate will have:

  • Demonstrated leadership skills that focus on team and restaurant development in a constructive, calm, methodical way. 
  • Strong organisational skills with a proven record of efficient kitchen and supply chain management. 
  • Excellent communication skills.
  • Ability to work autonomously and build productive relationships with members of the wider group teams based in Sydney.
  • A positive, proactive, can-do attitude.
