Sri Lankan Chef
Menu planning to combine western and Sri Lankan cuisine to create unique dishes, with an increasing focus on pure Sri Lankan food and Sri Lankan Australian fusion
Training cooks to prepare to execute the menu as designed
Assisting director to select cooks, and to train as necessary
Supervision of overall kitchen procedures, monitoring of quality of food, ensuring compliance with all policies regarding food preparation and ensuring high quality of food leaves kitchen at all time
Liaising with wait staff, director and Manager to discuss and resolve any issues with food preparation, briefing wait staff on specials and ingredients
Organising food supplies and assisting Manager to manage kitchen budget, anticipating stock needs
Explaining the special dishes to local clientele to increase the awareness of authentic Sri Lankan food
Preparing Sri Lankan desserts, sweetmeats pastries and Sri Lankan popular varieties of breads
Preparing Sri Lankan Kottu Rotti, Godamba Rotti, Coconut Rotti, String hoppers and Pittu and other a la carte dishes
Preparing canapes for buffets and Sri Lankan weddings and buffet presentations
Performing table side show cooking with Sri Lankan specialities not limited to Hoppers, Godamba and Coconut Rottis
Help prepare Sri Lankan breakfast preparations including traditional pastries
Preparing and writing Sri Lankan daily special menus, organising and preparing food for Sri Lankan food promotions and training other western Chefs and representing and promoting the restaurant at outside food events
Ensuring that health and safety issues and regulations are addressed and followed in accordance with occupational health and safety legislation
Ensuring kitchen remains at all times in a clean and hygienic state
Supervising cooks to ensure that curries are prepared and served at correct temperature and following preparation guidelines
Preparing fresh raw ingredients to roast and grind for daily curry preparations
Includes week and and shift work.
