The VenueThis is a busy restaurant near Cremorne that is stunning, it is getting a lot of press currently is the place to be in the area. Very cool fit out, lots of green and whites, feels very fresh and a bit like you are in LA (just a bit).
It is gaining lots of positive attention in the press and with the locals. The clientele, to give and idea, is mixed but particularly on a sunny the weekend lots of fashionable "30 something" ladies out for a lunch. It is a great vibe and being an open kitchen you are right in the middle of it.
This clientele, of course, leads the food style. Fresh, light, seasonal. Think.... Three Blue Ducks, Chiswick etc. Simple fresh colourful food build around seasons and whats good. They also have Josper Grill (one of 4 in Sydney) so that also features on the menu. The venue is shut Monday Tuesday so no calls to cover shifts on your days off.
The Team
The owners are known as good guys and both generous and reasonable. You will work hard, of course, but they look after their guys. Overall there is a team of around 10 plus kitchen hands and its a happy team.
You'll have a supportive management both FOH and with the owners.
What you will need
We are looking for a Sous Chef who is creative and likes this style of food (as above). On busy shifts, it's pumping so you will need to have the "5th gear" to turn it up a notch when its on.
Its a hands-on role, whether you are on the busy grill section or pass. Basically in there with the guys getting your hands dirty. It's a big kitchen and plenty of storage so it works well for the food and covers they are doing.
This is a newly created role in this venue and the ideal candidate is:
• Someone who is a great cook and can also handle a section when under the pump
• A chef who is always on the ball and a forward thinker.
• Highly organised and can maintain a high consistency in service and prep.
• Can create a calm and collaborative energy with their staff
Lastly but importantly, no ego. We are after an all-round good guy / girl personality wise. Its a senior role but pretty flat structure. So no Primadonnas.
