About the role

The Westin Brisbane is looking for a creative and innovative Executive Sous Chef to join the Pre-Opening Culinary Team!

The Executive Sous Chef will be required to oversee the smooth running of all sections of the kitchen under the guidance of the Executive Chef and take full responsibility in the absence of the Executive Chef.

Supervising, training, development and coordination of the kitchen brigade as well as effective communication and liaison with other departments.

Responsibilities include but not limited to:  

  • Focus on innovation ensuring the product offering is up to date and of appeal to our market
  • Be creative in the design and implementation of ongoing food concepts
  • Assist with the preparation of the monthly outlook and annual business plan process
  • Maintaining and controlling all venue expenses, ensuring they are within budget guidelines and business levels, eg. wage costs, overtime, supplies
  • Plan and develop menus for the hotel considering factors such as product availability, service cost, marketing conditions, number to be served, etc.Establishes and maintains appropriate food portions with respect to the hotel's pricing policy
  • Costing of menus and effective management of food cost
  • Control the preparation of work schedules to reflect operating forecasts and to keep within budgeted figures., including managing annual and long service leave
  • Implementation of quality control procedures to ensuring that all food products received into the kitchen are of the required standard and quality and that they are stored and rotated correctly
  • Attend regular shift leader and team meetings

Required   

  • Previous leadership experience in a 4 - 5 star hotel or similar
  • Creative flare for producing wholesome & nourishing food    
  • Familiarity is a busy, high volume and fast paced kitchen
  • Strong Communication Skills with ability to work as part of a diverse team
  • Must have Australian recognized Chef Qualifications
  • Available to work 7 days on a rotating roster - Days & Nights
