Hotel Rottnest is looking to appointment a Junior Sous Chef and a Chef D Cuisine to join our large & professional kitchen brigade.

An iconic hotel and expansive 1700 seat beachside venue, situated on the shore of Thomson’s Bay, Rottnest Island. With stunning views, we strive to deliver an inspired fusion of Mediterranean & Pacific rim fare, utilising the best of WA produce with an engaging beverage offer all which culminate to produce the perfect beachside social setting.

Role description:

As Chef D Cuisine you will play a primary role in the leadership of the kitchen brigade, and assisting in inspiring our culinary offer within our style guide.

  1. Lead the kitchen Brigade in order to control food presentation and quality
  2. Effective Member and Leader of kitchen Brigade in order to control food hygiene practices
  3. Develop solutions to ensure the C&E BQTS menus are delivered on spec
  4. Work effectively with the Executive chef to meet the kitchen KPIs
  5. Drive Positive Culture through leadership and consistency in personal performance
  6. Assist in the controlling food stock rotation and par levels across all storerooms
  7. To produce all approved format recipe cards and imagery
  8. Ensuring all stock is appropriately handled from delivery to plating
  9. Planning, Directing and Controlling Preparations
  10. Support in the induction of new staff re standards and expectation at work and outside work

As Junior Sous you will play an integral role within the kitchen brigade, following and maintaining standards.

  1. Effective Member and Leader of kitchen Brigade in order to control food presentation and quality
  2. Effective Member and Leader of kitchen Brigade in order to control food hygiene practices
  3. Develop solutions to ensure the seasonal menus are delivered on spec
  4. Develop solutions to ensure the C&E BQTS menus are delivered on spec
  5. Work effectively with the Chef D Cuisine and Executive chef to develop menus within the approved style guide
  6. Drive Positive Culture through leadership and consistency in personal performance
  7. Assist in the controlling food stock rotation and par levels across all storerooms
  8. Effectively following and producing all product in line with approved recipe cards and imagery
  9. Maintaining the cleaning roster
  10. Ensuring all stock is appropriately handled from delivery to plating
  11. Planning, Directing and Controlling Preparations
  12. Support in the induction of new staff re standards and expectation at work and outside work

You will work with knowledgeable and experienced management in a friendly non-prima donna environment.

To be consider you must hold a professional cookery degree, have previous experience working in notable busy kitchens in a senior role, good time keeping skills, a drive and passion for food!!!

We are looking for someone who is enthusiastic & motivated who we anticipate will have worked in a similar role within the hospitality industry. You will be a team player, have excellent communication skills and attention to detail in order to deliver outstanding quality and service.
