The Imperium Group has acquired a premium property in the Bayside area of Melbourne. With plans for refurbishment already in place, this property will become an iconic dining and function destination/venue.

We are building a team now to be involved with the planning and development of this property, and are seeking a Head Chef. Reporting to the General Manager, you will have full control of the kitchen and your team. 

In your role as Head Chef, you will lead by example and guide the kitchen team to success through the bar, events, and promotional activity. As a senior manager in the business, you will look for ways to improve profitability and increase revenue.

The role is very hands on with key responsibilities including:

• food service of breakfast, lunch, dinner and functions as required;
• day to day running of the kitchen & maintaining systems to ensure smooth running in your absence;
• rostering, training and managing the food control plan;
• ordering and controlling COGS;
• kitchen cleaning schedule, kitchen maintenance and repairs;
• menu costing, planning & development;
• stock control, budgeting and monthly reporting;
• work with the General Manager for the marketing of the restaurant, function spaces and bar.

To be considered for this role you must posses:

• Minimum three years’ experience as a sous Chef or above at an equivalent establishment (either high end restaurant or hotel)
• Catering and functions experience
• Commercial acumen and the ability to manage food & labour costs
• A willingness to work weekends, evenings & early mornings
• The ability to supervise & motivate your team and work with other departments as a team player
