Manta Ray, Hamilton Island's Mediterranean Restaurant is seeking a Head Chef to manage the day to day operations of this popular and high volume restaurant. 

About The Role

• Live on island position
• Open for lunch and dinner
• Full-time permanent position
• Lead a team of 15 to achieve consistent high standards of food quality and production
• Hands-on role requiring excellent communication skills with the front of house team
• In charge of kitchen, team, stock control, rostering, ordering
• Report directly to the Island Wide Executive Chef

About You

• Must have successfully completed Certificate 3 in Hospitality (Commercial Cookery)
• Demonstrated experience managing busy kitchens and leading teams
• Experience managing in high volume a al carte kitchens is essential 
• Mediterranean Cuisine experience - particularly Spanish Cuisine is highly advantageous
• Strong work ethic with the ability to work under pressure
• Excellent organisational, problem solving and interpersonal skills
• Creative and passionate about performing at the highest level
• Basic computer skills including Outlook and Excel
