Located in the foyer of Crown Metropol Hotel, Silks specialises in quality produce from Western Australia to create handcrafted dim sum, barbeque dishes and a range of multi-regional noodle and rice dishes. 

About the Role

A rare opportunity has become available for a talented Head Chef to lead our expert culinary brigade in Silks Restaurant. Reporting to the Executive Sous Chef, this crucial role will be responsible for managing the overall kitchen operation ensuring that Silks delivers at every opportunity. Effective management of financial budgets, food and labour costs along with advanced organisational skills, task delegation and kitchen team mentoring will be the key to success.

Requirements:

  • Previous experience as a Chef de Cuisine or at a Senior Chef level within a reputable establishment 
  • Experience in managing large kitchen brigades
  • Culinary expert at cooking multi-regional Cantonese cuisine
  • Worked within Hotel restaurants, the Casino industry or large Restaurant Chains and familiar with regulated corporate procedures
  • Demonstrated experienced in menu development with a focus on seasonality, current trends and customer preferences
  • Solid business acumen to manage and monitor financial budgets, food and labour costs and other associated expenses
  • Ensure compliance with relevant Occupational Health and Safety procedures including knowledge of HACCP
  • Demonstrated ability to build a successful and committed team and effectively manage performance 
  • Ability to maintain exceptionally high and consistent food quality standards at all times
  • Bilingual in English and Mandarin/ Cantonese language 
  • Experience with change management and instilling positive restaurant cultures
