Heron Island is a true coral cay, located right on the Great Barrier Reef. An established resort with new owners, new investment and a vibrant new direction forward, Heron accommodates up to nearly 280 guests with the primary drawcard being located right on the Great Barrier Reef. There is a marine centre, activities centre, boutique, award-winning day spa, spacious lounge and bar overlooking the pool plus the expansive Shearwater Restaurant. Marine activities for guests and staff include world-class diving, snorkelling, kayaking and cruises.

Our Shearwater Restaurant is open every day for breakfast, lunch and dinner. Breakfast is an expansive hot and cold buffet style of a very high and generous standard. Lunch is a la carte focusing on light to medium meals as you'd expect in a good city bistro. Dinner is a variety of multi-selection buffet, seafood, a la carte and table d'hote. Barista-style coffee is on offer as is an extensive Australian and New Zealand wine list.

We are now specifically seeking applications for an innovative and experienced Chef de Partie.

The role will offer variety and challenge as you will also play a role in supporting the Executive Chef with menu planning and design, inventory control, managing food & labour costings, report writing, staff training and development and ensuring compliance with HACCP.

What you will bring to the role;

  • Demonstrated experience in a la carte and function work in a similar environment
  • A passion for food and creative flair
  • High standards of operational compliance
  • Sound knowledge of commercial cooking 
  • Passion for delivery outstanding food service to guests
  • Experience in menu planning and design preferred
  • Proven ability in leading, developing and motivating a small team of chefs, cooks and stewards
  • Solid knowledge of relevant federal and state legislation
  • Friendly and flexible disposition that demonstrates a high level of professionalism

At Heron Island Resort shared or private accommodation is offered, dependant on the position. Staff meals are provided daily as is access to staff social facilities and discounts for the wide range of activities on the island. Ferry transfers between the mainland are at no cost. This is a truly live-work together culture and experience which one must be prepared to embrace and fully respect.
