The Company / Property

Jonah's Restaurant and Boutique Hotel, Whale Beach is one of Australia's most luxurious ocean retreats. The hotel is located in Sydney's Northern Beaches and has 11 boutique accommodation rooms and our award winning hatted Restaurant.

Under the direction of our Executive Chef, Matteo Zamboni, Jonah's Restaurant offers outstanding Contemporary Australian cuisine and an extensive wine list drawn from a cellar containing over 2500 bottles of vintage Australian and international wines. The five star menu and service has earned Jonah's Restaurant a 'Chef's Hat' from the Sydney Morning Herald Good Food Guide 2007, 2009, 2010, 2011, 2012, 2013, 2014 & 2015 as well as a 'Bent Fork' from Sydney Eats.

Matteo is now considering applications for the following vacancies, to join our award winning team:

  • Chef De Partie

The Roles

Pastry Chef

Working very closely with the Executive Chef and assisting in the day-to-day operations of the bakery and pastry section, you will be responsible for:

  • Preparing and baking breads
  • Preparing and plating desserts in accordance with the existing menus
  • General pastry work
  • Decorate cakes and baked goods according to requirements
  • Chocolate work
  • Operating baking equipment
  • Assisting in the development of menu ideas
  • Inspect the quality of the ingredients and measure them for specific recipes
  • Cleaning equipment and utensils and maintains your section in a clean and tidy order

This role would suit applicants looking to continue their Pastry Chef apprenticeship or a newly qualified Pastry Chef looking to fine tune their skills and experience under our highly respected team.

 

Chef De Partie

Controlling a section of the kitchen, you will be responsible for:

  • assisting the Executive Chef and Sous Chef with all aspects of kitchen operations
  • preparing, cooking and presenting a variety of a la carte dishes to the highest standard
  • Developing and enforcing service, presentation and operational standards
  • ensuring consistency and quality at all times
  • assisting in menu planning, development and costing
  • Ordering stock, kitchen supplies and equipment and control all stock levels where  required
  • Assisting with ongoing staff training and development
  • Receiving, signing and accounting for supplies and deliveries

 

To be successful in ANY of these positions YOU will have:

  • Trade Qualifications
  • Practical, demonstrated experience in the role you are applying for
  • The ability to work well under pressure and maintain a professional manner
  • Strong communication skills
  • An obvious passion for food and your culinary career and the desire to produce and be responsible for produce of the highest quality and consistency
  • Excellent presentation and consistency in both your work and personal life
  • Experience in a similar role in a five star or luxury environment is preferred
