About the business and the role
Based at Polish Hill River in South Australia's picturesque Clare Valley, Pikes established its vineyard and winery in 1984 and today markets its premium wines and beers throughout Australia and international destinations.
We are about to embark on the next exciting phase of our growth, a brand new integrated cellar door, restaurant and private cellar venue, opening late September 2018. We want to create exceptional wine and food experiences with a regionally and seasonally focussed Mediterranean-style menu which will compliment our wines and sense of place.
Job tasks and responsibilities
The Sous Chef will;
- Support the Head Chef and be integrally involved in the running of the kitchen;
- Assist in the designing of menus;
- Cook and prepare high quality meals;
- Be committed to a high standard of food hygiene;
- Work closely with suppliers;
- Prepare rosters;
- Work within budgets / targets;
- Be an industrious and harmonious team player;
Skills and experience
The successful applicant will be able to demonstrate an excellent track record in the following key competencies;
- Passion for food and innovation
- Strong pastry & baking knowledge
- Chef hat experience desirable but not essential
- Understanding of wine and food / wine pairings
- Strong experience in menu costings / working with budgets
- Calm and professional personality
- Strong organisational planning and time management
- Experience in larger format offerings [events & functions] essential
