JOB SUMMARY
The Sporting Globe Watergardens is looking for a Head Chef.
The job of a Head Chef covers all aspects of operations within the kitchen environment. It requires a strong work ethic, team focused attitude, proven leadership qualities as well as the ability to follow directions from the Executive Chef and of the management team.
REPORTING RELATIONSHIPS
On all kitchen related matters you will report to the Venue Manager when they are on shift, in their absence the Executive Chef.
All apprentices and kitchen hands will report to the most senior kitchen staff member working at the time. In the absence of the Head Chef or Sous Chef kitchen staff will report tom the Venue Manager.
DUTIES & ESSENTIAL JOB FUNCTIONS
To ensure that all meals are cooked in a manner which adheres to the venues recipe & plating guides as well as ensuring all meals are served in a timely manner and are of the highest possible quality.
Ensuring staff are allocated sections and secondary duties throughout their shifts, as well as managing general kitchen operations in conjunction with the head chef.
To maintain a safe and hygienic kitchen, that adheres to all food preparation and cleanliness guidelines. Also ensuring staff are following the kitchen cleaning systems.
Helping to improve current menu items and to develop specials and LTO's (limited time offers)
Stock ordering, Delivery receipts, temperature logs etc.
QUALIFICATIONS
- Fully Trade Qualified
- Cert 3 in Commercial Cookery
- Level 2 First Aid Certification
REQUIRED KNOWLEDGE AND ABILITIES
- Ability to cook a broad range of food items.
- Experience with kitchen operations and functions.
- Ability to work as part of a team.
- Ability to work in a high stress environment.
- Ability to follow and give direction when required.
- Previously Head Chef (or equivalent) experience required.
