The Wye Beach Hotel seeks a full-time chef to join our team.

Located in the heart of the spectacular Great Ocean Rd, Wye River hosts a small community
and is a destination for those looking to escape the shackles of city living. Located right on
the beach, with the bush at its back, a general store, great cafe and a pub, Wye River is an
idyllic location, loved by many.


We seek an applicant who:
 Has experience in putting high quality food on the pass, and maintains high standards
 Has experience in preparation, cooking, butchering, or pastry cooking as required
 Has no issue with following direction
 Is an excellent multi-tasker with good initiative
 Possesses a demonstrable passion for food
 Has excellent inter-personal skills, maintaining a calm demeanour in high-pressure
situations and uses these traits to perform well in a team;
 Is open to having input into seasonal menu design and on-going dish development and;
 Seeks to further their skillset and food knowledge by showcasing local produce

The role on offer is a permanent long-term position, and will sit within an established team, with long-term goals and new opportunities on the horizon.

Your tasks and duties in the kitchen will include:
 Food preparation and monitoring quality of dishes for both a la carte and function service, including demonstration of cooking techniques and advising on cooking
procedures.

 Planning menus and estimating food and labour costs

 Food service, across all sections in the kitchen, including discussing food preparation issues with the manager and kitchen staff
 Stock control and management, including ordering, examining and storing food stock
 Maintaining compliance with food safety and hygiene, and strictly implementing our OH&S policies
 Exercising responsibility for the direct supervision of other cooks and other kitchen/catering staff in the hotel kitchen and other catering services, including allocation of duties, preparation of rosters, approval of overtime and training of all kitchen staff in the absence of
the Head Chef.
 Monitoring cleaning rosters and food hygiene practices in the kitchen.
 Assisting in managing the training and development of apprentice cooks and other staff in the kitchen and other catering services.
 Developing and implementing workplace policies and procedures as directed by the Head Chef or the Hotel Management.
 Performing all duties consistent with the Vision, Mission, Values and policies of the Hotel and Statutory requirements.
