This is a Sydney institution, an well-known restaurant located in the heart of the CBD.  Classically styled with a definite contemporary European theme and quality fit out.

They are open Monday to Saturday (Shut Sunday). The clientele are corporate but very loyal and lots of regulars.  Excellent and warm service, run by passionate and friendly owners. 
  
This is a highly professional environment which offers the candidate the chance to work within a very rewarding company.  You'll be working with an award-winning wine list, over 300 bins, a mixture of European classics with New World contemporaries. 

As head sommelier you'll be responsible for all of the purchasing and COG's, as well as stock control. The position will also require a significant amount of in-house training, where you'll be expected to teach and mentor the floor team.

Experience

This a very open role for anyone who has the right attitude and the enthusiasm to be a success.  You will naturally come from a background of wine, either a junior sommelier looking for that step up or a current head sommelier looking for a job that offers a work/life balance. 

Ideally you'll have presence and some experience of floor/bar management as you'll be required to host and float the wine bar and restaurant floor in addition to wine duties.  Having a positive energy and stacks of confidence is essential.  You'll also have a good sense for business as you'll be responsible for budgeting, stock control and ordering.
