Sous Chef - Full time, Red Hill, Winery Restaurant

Work in an energetic team lead by Executive Chef Michael Demagistris (East Bar & Dining, Alinea, Chicago, and Noma, Copenhagen). Red Hill, Mornington Peninsula location.

Be part of this Mornington Peninsula vineyard venue which includes a cellar door, bistro, luxury accommodation and growing winery. It is an exciting time to join our team, as we continue to expand the Polperro group with the recent purchase of the iconic “Longtable restaurant ”in Red Hill.This space will be transformed into a contemporary all day dining venue and late night cocktail and wine bar under the creative direction of Hecker Guthrie .

The bistro’s foundations are built on the principles of authenticity, flavour and seasonality – offering a warm and welcoming, yet refined approach to dining.

Our menu is based around the principles of foraging, sourcing the highest quality produce possible and “made from scratch”. Our kitchen respects and highlights regional and estate grown produce, whilst fostering the ethos of sharing and kinship. We work with seasonal produce, where possible from our kitchen garden, we also support local businesses and have contract growers who are working with us towards our goals of zero waste. We showcase fresh and seasonal flavours, with a focus on creating dishes that complement the Polperro and Even Keel wines.

What will you bring to the group?

  • 2+ years Experience at a Sous chef level in a similar quality establishment .
  • Strong leadership & development skills 
  • Aligned passion for true made from scratch, paddock to plate and zero waste principles .
  • Strong polished communication skills
  • Available to work weekends 
  • Reliable transport 
  • Legally able to work in Australia
