Fresh+ stores and cafes provide food and drink to the general public within hospitals in 16 locations in New South Wales, Queensland and South Australia.

About the role

Reporting to the Head of Fresh +, this position will be accountable for: menu development and strategy, COG’s, compliance, food safety program including annual HACCP auditing, supplier negotiations and supplier compliance, compliance with the NSW Healthy choices, internal development of BOH teams, manage and update cost prices in the internal POS system

This position will be based at Fresh + Blacktown Hospital.

Roles & Responsibilities

  • Develop, complete and update all menu costing in Fresh+, Doctors Orders and Long Shot nationally
  • Assessment of the current Fresh + range to ensure alignment with the Healthy Choices framework in NSW
  • Continual focus on reducing the COG’s across all Food and Beverage
  • Assess the current performance of menu items and recommend and replace non-performing items
  • Complete the NIP panels (Nutritional information Panels) for the recipes, including allergen information, so these are available on the Food by WHSmith web site
  • Participate in the price review from all suppliers and regional supply chain, conduct the analysis of the side by side comparison and report to ensure the best pricing is achieved
  • Update and maintain online order forms used in the supplier portals
  • Cost and develop the standard recipes for the Doctors orders café
  • Enhance the current menu range, including seasonal offerings
  • Development of catering menus; function and cocktail/off site for all Fresh +, Doctors Orders and Long Shot sites
  • Data entry of new recipes into Torex system
  • Manage the Food compliance systems
  • Help develop the overall food strategy and partner with our clients and customers
  • Work with the National Operations manager in developing our people and our service style that returns a positive commercial outcome for the business
  • Support the Back of House teams across the business, providing one on one coaching and training where required
  • Conduct internal auditing and participate in analyse stocktaking

Skills & Experience

  • Must have held a position of Executive Chef level or Senior Sous Chef
  • Have a full understand of recipe costings
  • Skilled in supplier negotiations, recipe development (under-pricing constraints) and menu engineering
  • Must be able to work autonomously
  • High level of analytical skills, recipe margins, task touch points
  • Intermediate to advanced Excel ability
  • Excellent time management skills with the ability to meet project deadlines
  • High quality of work
  • Strong communications skills

This is a national role with local and interstate travel required.
