Sails Resort Port Macquarie - by Rydges is a reputable property located on the beautiful NSW mid North Coast on the Port Macquarie Marina and is part of the renowned global brand - Event Hospitality & Entertainment. The recently refurbished 92 room hotel is highly regarded and is currently putting the finishing touches on a 12 million dollar refurbishment which includes additional rooms, the pavilion, exciting new restaurant & bar concept overlooking the Marina and a new rooftop conferencing centre with seating capacities for up to 300 guests.

Rydges Port Macquarie is a 4 Star CBD property consisting of 122 Guest room and apartments, Zebu Restaurant, bar and Café overlooking the Hastings River and the Bayside Conference centre with 4 conference rooms and with seating capacities up to 300 guests.

This role presents a unique opportunity for an experienced, ambitious and creative professional to put their stamp on the Port Macquarie food scene. The focus of the Area Executive Chef will be to drive innovation in menu development and the delivery of on trend region appropriate food offerings, mentoring and developing the properties kitchen brigades and overseeing a service culture and operational requirements fitting of the Port Macquarie leading venues.

The position requires a results-driven Area Executive Chef who is motivated, embraces challenges and is capable of bringing the values and goals of the Port Macquarie Venues in line with their everyday life.

About the role

Job tasks and responsibilities

  • Develop, evolve and innovate menus across various service periods to ensure the resort is always exceeding our guest's expectations.
  • Develop innovative on trend, cost effective function centre menus.
  • Build and nurture relationships with suppliers to ensure the finest produce is always available to work with.
  • Manage the respective kitchen teams with direct reports to ensure effective rostering, administration, food standards and procedures are maintained in the properties.
  • Manage on-boarding, training and development of all kitchen staff.
  • Ensure the business achieves its financial and operational goals through cost control procedures and management.
  • Ensure standards and procedures are effectively implemented and maintained in the kitchen.
  • Conduct ongoing assessment of product and the guest experience, taking action for change or improvement where required.
  • Monitor the assets, equipment and aesthetic to ensure excellent working conditions.
  • Foster a culture of inclusion, innovation and excellence, ensuring people have the support, skills and tools to excel in their roles and grow.
  • Set goals and engage with senior management on strategic planning processes and innovation.
