The Bellagio Tuckshop is a bakery/ cafe in the heart of the Eastern Suburbs and is looking for a senior baker to come and join our small dedicated team and refine our already celebrated product and help maintain and build the business.

We have only been open for a short time, but our product is already getting rave reviews over Sydney. 

The right candidate would have experience in all aspects of bread production. Pastry experience would be preferred but certainly not essential.

The kitchen is shared with the cafe so the bakery runs from 5pm.

This is a hands on role and the right person would be excited about both the running of the bakery and the making of the product.

 The Employee's Responsibilities and Duties are as follows. Completing work as directed by the Employer from time to time. The Employee's Duties further include, but are not limited to:

•  Coordinating the full end to end preparation and production of traditional baked goods, artisan breads, bread rolls, and pastry products;

o  Checking cleanliness of all equipment and baking area before commencing production of baked goods

o  Checking the ingredients – ensuring freshness and high quality

o  Weighing raw ingredients, flours, sugar, etc. use to create doughs and pastries

o  Preparing, kneading, maturing, moulding, resting, cutting, shaping, doughs and pastry mix

o  Preparing jams, jellies, custards, chocolate sauces, and other pastry fillings

o  Preparing meat fillings for pies, and artisan sausage rolls

o  Preparing nuts, sauces, icings and other topping which are used to decorate sweet pastries

o  Monitoring oven temperatures and cooking times

o  Monitoring the accurate baking of bread batches, speciality bread rolls, pies and pastries

o  Glazing buns, pastries and baked goods

o  Emptying and cleaning cooking equipment, baking trays, muffin trays, etc.

•  Creating and modifying new and existing recipes to create modern twists on traditional baking recipes

•  Staying abreast of baking trends such as hybrid baking products (for example cronuts/cruffins) organic

baking, gluten free recipes, raw desserts, superfood baking etc.

•  Any other ad hoc baking duties as required
